The good,the bad and the Cholestrol!
I am sure you are aware that fat and Cholesterol are not the same thing. Cholesterol is a fat like substance that is present in all animal foods like: meat, poultry, fish, milk, and egg. It likes to hideout in places like that delicious skin on fried chicken. Lean and fat meat have varying degrees of cholesterol so does low-fat milk vs. skim milk. Saturated fat raises blood cholesterol levels in many people. This does not mean you need to eliminate those items from your diet it just means you may want to consider using learner cuts of meat or low fat dairy items. You may occasionally want to substitute dry beans in place of meat. As hard as it is for me to say no to meat, I do it occasionally. I am trying to make to a ripe old age!
There are two types of Cholesterol: LDL and HDL. LDL collects in the walls of blood vessels, causing the blockages and HDL cholesterol is the well-behaved "good cholesterol." This friendly scavenger cruises the bloodstream and removes harmful bad cholesterol from where it doesn't belong. High HDL levels reduce the risk for heart disease.
