Bacteria, the uninvited party guest! To keep bacteria that single celled party crasher from bringing havoc to your next cookout. Get a thermometer and use it to help you keep your food out of the "Temperature Danger Zone" which is between 41-140 degrees Fahrenheit. The Temperature Danger Zone is the temp range where Bacteria and Microorganisms reproduce rapidly and this can be dangerous if food is not cooked properly.
There are two types of thermometers you may want to consider for inside kitchen cooking or outside on the grill. The digital thermometer or a bi-metallic pick and use the device of your choice to determine the internal temperature of foods while you are cooking so that you ensure temperature is high enough to kill off all the bad bacteria, germs, and stuff that can make someone sick.
Keep the cold foods below 41 degrees, but when it comes to the hot stuff you want the internal temperature to reach a minimum internal temperature of 141 degrees for a minimum of 15 secs. If your heating previously cooked items (leftovers). Let those items reach an internal temp of 165 degrees for 15 seconds.
